Acorn Spice Shortbread Cookies
2 sticks unsalted butter, softened
6 T. confectioner's sugar
2 T. dark brown sugar
1 1/2 c. all-purpose flour
1/2 c. acorn flour
1/4 tsp. baking powder
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. salt
Cream the butter with the two sugars until light and fluffy.
Whisk together the remaining ingredients, then add them gradually to the butter mixture, scraping down the sides of the bowl.
The dough will be very soft, so you may need to chill it for a while before working it further.
Pat it into two cylinders, about 1 1/2 inches in diameter each.
Chill thoroughly until very firm.
Slice into coins, arrange on a cookie sheet and bake at 300° for about 20 mins. until the edges darken.
Makes about 60 cookies.
